Barbecue Beer Chicken Recipe, quick and easy dinner recipe the whole family will love.

We have super warm weather here in the south, and it’s starting to feel like spring and is making me in the mood for barbecued chicken. The recipe is super simple, and you probably have everything on hand to make this recipe. My mother growing up used beer a lot to marinade different meats, so she inspired this recipe. (Side note the worst part of being pregnant is sobriety for 10+ months- if you’re like me this is an excellent way to sort of get the taste, safely). This recipe should yield 4-6 servings depending on the size of the chicken.skillet chicken-5Ingredients:
3 boneless, skinless chicken breasts
1 ½ tablespoons of soy sauce
1 tablespoon Worcestershire sauce
4 tablespoons savory mesquite rub store bought or homemade (see ingredients below)
2 ½ tablespoons barbecue sauce
½ of a bottle of beer (your choice)
1 tablespoon minced garlic

1. Put chicken in bowl or Ziploc bag and combine with the savory mesquite rub.
2. Add wet ingredients to chicken (minced garlic, soy sauce, Worcestershire sauce, barbecue sauce, beer).

I love having quick dinner recipes on hand for crazy weeknights. One way I always have dinner ready in a jiffy is by keeping pre-cooked shredded chicken breast on hand. (THRIFTY DIVA TIP: I always prefer to use shredded chicken over diced because it seems to stretch meals further, which helps keep my grocery bill down!)

My family LOVES hot cheesy Buffalo chicken dip—so I thought why not convert our favorite dip into stuffed bell peppers for dinner!

  • 4 bell peppers (any color of your choosing)
  • 2 tablespoons of powder ranch dressing
  • 2/3 cup of hot sauce
  • 4 cups cooked and shredded chicken (or 2 chicken breasts shredded)
  • 2 cup shredded mozzarella cheese


  1. Combine ranch, buffalo sauce, and chicken together in a mixing bowl.

2. If you’re using precooked chicken and it is cold from the refrigerator, microwave the mixture for a minute to warm it up (skip this step if you just cooked your chicken and it’s still hot)

3. Slice Bell peppers in half-length wise & seed the bell peppers.buffalo chicken bell pepper-4

4. Add 1 ½ cup of mozzarella cheese to the buffalo chicken mixture, then stuff into mixture into bell pepper.

5. Use remaining ½ cup of cheese to top the bell peppers.
