Barbecue Beer Chicken Recipe

Barbecue Beer Chicken Recipe, quick and easy dinner recipe the whole family will love.

We have super warm weather here in the south, and it’s starting to feel like spring and is making me in the mood for barbecued chicken. The recipe is super simple, and you probably have everything on hand to make this recipe. My mother growing up used beer a lot to marinade different meats, so she inspired this recipe. (Side note the worst part of being pregnant is sobriety for 10+ months- if you’re like me this is an excellent way to sort of get the taste, safely). This recipe should yield 4-6 servings depending on the size of the chicken.skillet chicken-5Ingredients:
3 boneless, skinless chicken breasts
1 ½ tablespoons of soy sauce
1 tablespoon Worcestershire sauce
4 tablespoons savory mesquite rub store bought or homemade (see ingredients below)
2 ½ tablespoons barbecue sauce
½ of a bottle of beer (your choice)
1 tablespoon minced garlic

Directions:
1. Put chicken in bowl or Ziploc bag and combine with the savory mesquite rub.
2. Add wet ingredients to chicken (minced garlic, soy sauce, Worcestershire sauce, barbecue sauce, beer).
3. Let chicken marinate for as long as possible.skillet chicken-64. Heat up the grill on medium low heat. Place chicken on the grill. Cook until the thermometer reads 165 degrees F.chicken blog

My Savory Mesquite BBQ Rub contains:
Salt, Onion powder, garlic powder, smoke flavoring, and paprika. It’s from Aldi its $4.50 and you get four different rubs in one container (which is a great deal in my opinion because it costs much more to buy four seasonings individually and they usually have a bunch of different choices).

Buffalo Chicken Stuffed Bell Peppers

Buffalo Chicken Stuffed Bell Peppers- an easy, quick dinner recipe for any weeknight.

Serves 4           Prep & Cook Time 45 mins

I love having quick dinner recipes on hand for crazy weeknights. One way I always have dinner ready in a jiffy is by keeping pre-cooked shredded chicken breast on hand. (THRIFTY DIVA TIP: I always prefer to use shredded chicken over diced because it seems to stretch meals further, which helps keep my grocery bill down!)

My family LOVES hot cheesy Buffalo chicken dip—so I thought why not convert our favorite dip into stuffed bell peppers for dinner!

Hey all, if you are looking for a super, easy, quick, and tasty appetizer look no further. My grandmother’s wonderful party mix is it. She always had it during cocktail hour in the summers at the lake and during the holidays. She made large batches of it and kept it stored in cookie tins in the freezer.
